Lightly smoked blue fin tuna with Jamon Iberico, jellied tuna consommé, red pepper emulsion, anchovy and garlic aioli, aromatic crumbs


Course 3 - 1999 Charles Heidsieck Vintage Rose
Slow cooked breast of squab with confit leg, roasted baby beets and sauce rouennaise


Course 4 Dessert – Moet & Chandon Nectar Imperial
